From the mid-1980s, meat consumption in Italy and the western world have stabilised and, in the face of a well-established food security, we have witnessed a changed sensitivity for ethical issues, such as animal welfare and environmental impacts of farms. Analysing the sustainability of meat and cured meats means studying in the most objective way possible different topics concerning both the consumer and the livestock production. This volume presents an interdisciplinary study to describe the "5 faces" of meat sustainability: nutrition, environmental impacts and the circular economy applied to farms and industry, food security and animal welfare, the economic aspects of supply chains and the fight against food waste.

Animal Welfare Management in Norway is about how authorities can best promote high standards of well-being and respect for animals. In Norway, the Norwegian Food Safety Authority has primary responsibility for ensuring that businesses and persons comply with animal welfare laws and regulations. This book presents the results of a unique research project on the effects of the Food Safety Authority's efforts within land-based food industries, in which key questions were: What kinds of regulatory measures and oversight are most effective? Is organizing all regulatory activity under one authority worthwhile? Is industry receptive to oversight? How can the authority utilize measures such as guidelines, warnings or punishment to best effect? This book provides new insight into challenges associated with animal welfare management, an area that has previously been under-researched in Norway. The book is geared toward persons with supervisory roles as well as those working in industries that handle animals, but it will also be of interest to anyone concerned with animal welfare or oversight in general. The book can also be relevant for instruction at the higher educational level. The contributors have backgrounds in political science, law, sociology, social anthropology, veterinary and other livestock-related fields, as well as inspection services. The book has been edited by Stig S. Gezelius, a professor at the University of South-Eastern Norway, and Frode Veggeland, a professor at the University of Oslo and senior researcher at the Norwegian Institute of Bioeconomy Research (NIBIO). The editors are experienced in research into public administration and implementation of legislation.

This Special Issue provides a collection of recent research and reviews that investigate many areas of welfare assessment, such as novel approaches and technologies used to evaluate the welfare of farmed, captive, or wild animals. Research in this Special Issue includes welfare assessment related to pilot whales, finishing pigs, commercial turkey flocks, and dairy goats; the use of sensors or wearable technologies, such as heart rate monitors to assess sleep in dairy cows, ear tag sensors, and machine learning to assess commercial pig behaviour; non-invasive measures, such as video monitoring of behaviour, computer vision to analyse video footage of red foxes, remote camera traps of free-roaming wild horses, infrared thermography of effort and sport recovery in sport horses; telomere length and regulatory genes as novel biomarkers of stress in broiler chickens; the effect of environment on growth physiology and behaviour of laboratory rare minnows and housing system on anxiety, stress, fear, and immune function of laying hens; and discussions of natural behaviour in farm animal welfare and maintaining health, welfare, and productivity of commercial pig herds.
