Abstract

Mondialement reconnue pour sa gastronomie, la France est aussi le pays des cantines… dont les opérateurs occupent une position dominante sur les principaux marchés internationaux. Sur notre territoire, ils se hissent au premier rang des employeurs de cuisiniers, avant les restaurants. Ils offrent des conditions de travail relativement satisfaisantes et leurs contraintes d’activité impliquent plutôt une maîtrise ou un élargissement des compétences traditionnelles de la restauration. Mais le positionnement identitaire du secteur reste difficile, tant sous le prisme d’images anciennes qu’à travers un caractère social encore déprécié. Ce phénomène s’observe également dans un nombre croissant de restaurants, qui tendent à s’éloigner du modèle artisanal ou artistique pour adopter une conception plus industrielle ou plus banalisée de la production culinaire. L’ancrage singulier de la cuisine française dans un passé mythifié, présenté comme exclusivement gastronomique, contribue à expliquer l’ampleur du décalage entre idéal professionnel et réalité du métier. D’où l’émergence d’un sentiment nostalgique. Avec le temps, le rêve d’une restauration gastronomique de renom s’estompe-t-il au profit d’une alimentation plus fonctionnelle et moins prestigieuse ? Les cuisiniers qui exercent une activité non conforme à leur ambition première parviennent-ils à réaliser leur idéal professionnel sur la base de compétences nouvelles ? Ceux qui n’ont jamais connu de véritable ambition gastronomique s’adaptent-ils mieux que leurs confrères à la réalité du métier ? Le présent ouvrage, qui pour la première fois aborde le marché de la restauration dans son ensemble, s’appuie sur un ancrage historiographique critique et une comparaison internationale pour offrir une approche inédite du secteur de l’hôtellerie-restauration et du métier de cuisinier, dans l’éventail de leurs évolutions.

Abstract

In January 2020, the Center for Science in the Public Interest (CSPI), The Food Trust, Johns Hopkins Bloomberg School of Public Health, and Healthy Eating Research (HER) met for a Healthy Retail Research Convention in Washington, D.C. Attendees included food industry representatives, researchers, and nonprofit organizations. The objective of the convention was to develop a national healthy retail research agenda by (1) determining the effectiveness of government policies, corporate practices, and in-store pilots in promoting healthy eating; (2) identifying gaps in the healthy food retail literature and generating questions for future research, with an intentional focus on reducing health disparities and improving equity; (3) highlighting best practices for partnering with retailers and food manufacturers on healthy retail research; (4) facilitating relationships between retailers and researchers to implement and evaluate retail interventions; and (5) identifying existing datasets, ongoing work, and new opportunities for retail–research partnerships.

Abstract

Food insecurity is a complex ‘wicked’ problem that results from a range of unstable and uncertain physical, social, cultural and economic factors that limits access to nutritious food. Globally, 800 million people are under-nourished, and around 2 billion are overweight/obese or have micronutrient deficiency. These populations are largely positioned in developing countries where disease burden is high and impacts health budgets and productivity. Similarly developed countries, cities and neighbourhoods are experiencing a greater emergence of vulnerable populations. This is in part explained by the change in the food production and manufacturing, the retraction in economic climates, the increase in food price, and in some regions reduced food availability and access.Vulnerable groups include but are not limited to migrant populations, Indigenous people, elderly, pregnant women, those with disability, homeless, young children and youth. Poor nutrition at significant periods of growth and development and during life impact long term health outcomes increasing non-communicable disease prevalence, health cost and reducing economic productivity.

Abstract

According to the Food and Agriculture Organization of the United Nations, one-third of the world’s food produced for human consumption is lost or discarded. Meanwhile, the world needs to create a sustainable food future to feed the more than 9 billion people that are expected to inhabit the planet by 2050. The United Nations’ Sustainable Development Goals represent a global agenda for improving sustainability at a global level, and one of these goals (goal 12) is devoted to ensuring sustainable production and consumption patterns. This Special Issue intends to unify multidisciplinary areas of knowledge, under the sustainability pillar, based on knowledge about one of the most relevant agents for overall environmental impacts: food production and consumption. Therefore, the aim of this Special Issue is to highlight sustainability assessment in the contexts of agri-food production, food consumption, and food waste reduction to meet the needs of updating knowledge and developing new skills required by multiple social and economic agents. Food waste implies significant economic losses, ethical and social issues, adverse environmental effects, and considerable nutritional consequences, posing a threat to global sustainability. The purpose of this issue is to shine a light on the significance of research and practical initiatives engaged in the United Nations Agenda 2030 for Sustainable Development, specifically in protecting the planet by promoting sustainability in food production and consumption aiming at informing and influencing policy and practice globally.

Abstract

Our Special Issue we publish at a turning point, which we have not dealt with since World War II. The interconnected long-term global shocks such as the coronavirus pandemic, the war in Ukraine, and catastrophic climate change have imposed significant humanitary, socio-economic, political, and environmental restrictions on the globalization process and all aspects of economic and social life including the existence of individual people. The planet is trapped—the current situation seems to be the prelude to an apocalypse whose long-term effects we will have for decades. Therefore, it urgently requires a concept of the planet's survival to be built—only on this basis can the conditions for its development be created. The Special Issue gives evidence of the state of econophysics before the current situation. Therefore, it can provide excellent econophysics or an inter-and cross-disciplinary starting point of a rational approach to a new era.
