When Princeton anthropologist John Borneman arrived in Syria's second-largest city in 2004 as a visiting Fulbright professor, he took up residence in what many consider a "rogue state" on the frontline of a "clash of civilizations" between the Orient and the West. Dans sa thèse Artisans et commerçants au Caire au XVIIIe siècle publiée en 1973, André Raymond inaugurait une méthode de recherche qui, associant l'étude des archives à la consultation d'autres sources manuscrites ou imprimées, éclairait d'un jour nouveau l'histoire économique et sociale de la capitale égyptienne lors d'une période jusqu'alors négligée : l'époque ottomane. Les études rassemblées dans le présent ouvrage par l'Institut Français de Damas transportent à Alep l'application de ces méthodes. André Raymond a choisi lui-même parmi ses propres travaux plusieurs articles portant sur la question. À travers l'examen détaillé des activités économiques, du réseau de voies urbaines, du mode de vie des habitants et de leur comportement social, il y démontre que le développement d'Alep, souvent considéré comme anarchique, relève au contraire d'une ferme logique. L'auteur prend en compte des facteurs tels que la démographie, les échanges entre la ville et la campagne et l'incidence du commerce international, régional et local. Dans le même temps, il insiste sur l'importance de lieux tels que les caravansérails, les marchés ou les ateliers d'artisanat, dont les produits dominèrent, dans l'empire ottoman et bien au-delà, de nombreux marchés.
