Depuis des millénaires, l'homme voue aux animaux domestiques une passion qui s'est rarement démentie. Pourtant, les bêtes, même les plus fidèles, trahissent leur maître, livrant à l'anthropologue les ressorts les plus secrets de l'action et de la pensée, bref, de la nature même de l'homme. Par domestication, il faut entendre l'action que l'homme exerce en permanence sur les animaux qu'il détient, ne serait-ce qu'en les élevant. Corollairement, il n'y a pas des espèces domestiques et des espèces sauvages, mais des animaux - appartenant à quelque deux cents espèces, du chien au bombyx du mûrier (ver à soie) - sur lesquels l'homme a exercé, à un moment ou à un autre, d'une manière ou d'une autre, une action de domestication. Celle-ci repose avant tout sur un désir plus ou moins inconscient, lié à l'hominisation, d'appropriation et de transformation de la nature et des êtres vivants. En domestiquant des animaux, l'homme établit avec eux des rapports de pouvoir et/ou de séduction qui ne sont pas, au fond, si différents de ceux qu'il entretient avec ses semblables. D'où les sentiments passionnés que les animaux domestiques inspirent si souvent aux humains, citadins modernes aussi bien que chasseurs-cueilleurs, pasteurs nomades ou paysans. A travers l'inventaire exhaustif d'un domaine traditionnellement réservé aux archéologues, aux zoologues et aux zootechniciens, c'est donc une véritable anthropologie de la domestication animale qui est ici fondée.
