Even if they comply, member states interpret and adapt EU rules in very diverse ways when putting them into practice. We can think of and measure this diversity as a phenomenon of regulatory change along the implementation chain. The book explores what explains customization, and what it means for providing policy solutions to shared problems. It studies the implementation of EU food safety policies in Austria, Germany, France, the United Kingdom and Switzerland using innovative qualitative comparative techniques. After looking at the role of prominent compliance arguments and the “logics of action” for customization, the study assesses how differing degrees of customization affect the success of the implementation. The book provides a new, evidence-based perspective on “gold-plating” and better regulation in Europe for scholars, students and practitioners of policy implementation, European integration and Europeanization alike. Eva Thomann is a senior lecturer in politics at the Department of Politics, University of Exeter, UK. Her research about the implementation of public policies particularly focuses on member state implementation in the European Union and policy implementation by “street-level bureaucrats”. She specializes in set-theoretic comparative configurational research methods.

Fermented foods represent a wide variety of daily foods consumed world-wide, made from ingredients of animal (milk, meat, fish) and plant (cereals, starchy crops, leguminous seeds, fruits) origin. Notwithstanding the antique roots of food fermentation, its products enjoy great popularity not only because of their attractive taste and flavour, but also for their prolonged shelf-life and safety, their wholesomeness and nutritional value and because of a number of recently proven health-promoting traits. In het eerste deel wordt ingegaan op aspecten als wijze van monstername en transport, verdunning en bereiding van monsters en kleuring van micro-organismen. In deel 2 worden groepen voedingsmiddelen en diervoeders besproken. De delen 3 en 4 geven vervolgens aan hoe het onderzoek van de belangrijkste groepen van micro-organismen of soorten wordt uitgevoerd. In deel 5 wordt lijn- en omgevingsonderzoek behandeld. Er wordt besproken hoe en met welke materialen microbiologisch onderzoek van handen, lucht, water en omgeving plaatsvindt. Deel 6 behandeld de voedselveiligheid en deel 7 geeft informatie over snelle detectiemethoden. In deel 8 wordt ingegaan op desinfectantia, bacteriofagen, bacteriegroeiremmende stoffen en de fosfatasetest. De crisis in de voeding en meer bepaald de dioxinecrisis heeft aangetoond hoe lang en complex de weg tussen product en consument was. Ongedierte hoort niet thuis in de voedingsindustrie. Omwille van de risico's verbonden aan hun aanwezigheid zijn voedingsbedrijven genoodzaakt ongedierte aan te pakken. Niet alleen door de wetgever, maar ook vanuit de retail worden zij hier op hun verantwoordelijkheden gewezen. De aanpak van ongedierte behoort al jaren tot het basisvoorwaardenprogramma en dus het HACCP-systeem van vele voedingsbedrijven.
