Abstract

Few titles could be timelier than the second edition of Crisis Management in the Food and Drinks Industry - A Practical Approach. The world is worrying about a human pandemic arising from the avian flu epidemic that is spreading from the Far East, the implications of which could be as great for the food industry as were the outbreaks of foot and mouth disease and BSE. This practical and greatly expanded edition by media and public relations veteran Colin Doeg focuses on the communications aspects of dealing with a crisis. It is global in its coverage of the subject, reviewing practices and requirements in countries ranging from the USA and the UK to Australia and New Zealand. Doeg offers advice ranging from preparing for the unthinkable to the dramatic expansion of the Internet, avoiding being caught off-guard by a situation, the ramifications of product tampering and managing an actual crisis. Abstract

The development of materials for any replacement or regeneration application should be based on the thorough understanding of the structure to be substituted. This is true in many fields, but particularly exigent in substitution and regeneration medicine. The demands upon the material properties largely depend on the site of application and the function it has to restore. Ideally, a replacement material should mimic the living tissue from a mechanical, chemical, biological and functional point of view. Of course this is much easier to write down than to implement in clinical practice. Mineralized tissues such as bones, tooth and shells have attracted, in the last few years, considerable interest as natural anisotropic composite structures with adequate mechanical properties. In fact, Nature is and will continue to be the best materials scientist ever. Who better than nature can design complex structures and control the intricate phenomena (processing routes) that lead to the final shape and structure (from the macro to the nano level) of living creatures? Who can combine biological and physico-chemical mechanisms in such a way that can build ideal structure-properties relationships? Who, else than Nature, can really design smart structural components that respond in-situ to exterior stimulus, being able of adapting constantly their microstructure and correspondent properties? In the described philosophy line, mineralized tissues and biomineralization processes are ideal examples to learn-from for the materials scientist of the future.

Abstract

Reports that heat processing of foods induces the formation of acrylamide heightened interest in the chemistry, biochemistry, and safety of this compound. Acrylamide-induced neurotoxicity, reproductive toxicity, genotoxicity, and carcinogenicity are potential human health risks based on animal studies. Because exposure of humans to acrylamide can come from both external sources and the diet, there exists a need to develop a better understanding of its formation and distribution in food and its role in human health. To contribute to this effort, experts from eight countries have presented data on the chemistry, analysis, metabolism, pharmacology, and toxicology of acrylamide. Specifically covered are the following aspects: exposure from the environment and the diet; biomarkers of exposure; risk assessment; epidemiology; mechanism of formation in food; biological alkylation of amino acids, peptides, proteins, and DNA by acrylamide and its epoxide metabolite glycidamide; neurotoxicity, reproductive toxicity, and carcinogenicity; protection against adverse effects; and possible approaches to reducing levels in food. Cross-fertilization of ideas among several disciplines in which an interest in acrylamide has developed, including food science, pharmacology, toxicology, and medicine, will provide a better understanding of the chemistry and biology of acrylamide in food, and can lead to the development of food processes to decrease the acrylamide content of the diet.
