Ce volume hors-série de la revue Recherches germaniques entend contribuer au développement, en France, des études animales et culturelles et littéraires (Cultural and literary animal studies), champ de recherche apparu aux États-Unis et en Grande-Bretagne dès les années 1980. Ce "tournant animal" fait écho à une profonde évolution des sensibilités et à une prise de conscience de l'urgence face à la disparition toujours plus rapide des espèces. Le présent numéro est organisé autour de trois axes. Le premier concerne la construction des savoirs "scientifiques" sur l'animal et les implications éthiques de l'expérimentation animale depuis le début du XIXe siècle. Le deuxième aborde les imaginaires de l'animal(ité) ainsi que leurs significations culturelles et symboliques dans la littérature et l'histoire culturelle des pays de langue allemande.
