The issue of long-term agricultural transformations remains a hot topic in historiography. The texts of this book intend to take this debate seriously into account by putting several models of alternative crops to facts. The treatment of long-term agricultural transformation remains a lively topic for historians. Much debate arose when agricultural development patterns were discovered that did without a dominant, production-oriented cereal crop, even when it was accompanied by livestock farming. Joan Thirsk hoped to conclude this debate by putting forward the hypothesis that such “alternative agriculture” was the farmers’ way of responding to the difficulties caused by periods of low agricultural prices. This theory stirred up controversy and arguments both for and against. The contributions to this volume take this hypothesis seriously and attempt to assess its validity. Examining a large number of “alternative agricultures” over the long term, from the fifteenth to the twentieth century, they discuss the issues encountered in tracing the links between the spread of alternative crops, such as fruits and vegetables, flowers, and industrial crops, and the general economic environment, across a vast swathe of territory stretching from Flanders to Spain and from France, through Italy and Switzerland, as far as Russia.

Interactive media designers have been discussing modes to optimize interaction design beyond mere usability. With the arrival of Emotional Design followed by the success of the User Experience (UX) approaches, the discussion continued and augmented. Experience has become a complex buzzword, which is more about the subject’s experience than the product, and this is why it's difficult, or even impossible, to define it in a concise manner. We propose to move the discussion from Experience towards Engagement, to emphasize the design of the relationship between artefacts, contexts and users. Engagement asks for a more concrete type of experience, with specific needs, motives, skills and competences, which can be more clearly worked into the design of artefacts. Engagement also differs from other concepts e.g. fun, enjoyment, happiness or well-being and is open enough to grant freedom to designers in creating their personal world views. To push this new approach, we offer in this book a full model for the design of engagement in interactive media, still believing it can be applied beyond that. The model is arranged around what we call the three engagement streams: Progression, Expression and Relation.

This 3rd edition of Food and Agricultural Biotechnology in Ethical Perspective updates Thompson’s analysis to reflect the next generation of biotechnology, including synthetic biology, gene editing and gene drives. The first two editions of this book, published as Food Biotechnology in Ethical Perspective in 1997 and 2007, were the first comprehensive philosophical studies of genetic engineering applied to food systems. The book is structured with chapter length treatments of risk in four categories: food safety, to animals, to the environment and socio-economic risks. These chapters are preceded by two chapters providing orientation to the uses of gene technology in food and agriculture, and to the goals, methods and background assumptions of technological ethics. There is also a chapter covering all four types of risk as applied to the first US technology, recombinant bovine somatotropin. The last four chapters take up 1) intellectual property debates, 2) religious, metaphysical and “intrinsic” objections to biotechnology, 3) issues in risk and trust and 4) a review of ethical issues in synthetic biology, gene editing and gene drives, the three key technologies that have emerged since the book was last revised.

Legumes are a major constituent of vegetarian diets and alleviate malnutrition because they are protein-rich and easily digestible. Moreover, a legume-based diet is much more sustainable than a meat-based diet. Recent research has disclosed major advances in legume agriculture and biotechnology, leading to improved health benefits from nutrients, antioxidants, polyphenolic phytochemicals, phenolic acids, flavonoids and tannins. This book reviews bioactive compounds and their applications, and conventional breeding and biotechnology for legume sustainability and nutritional enhancement.
