High pressure (HP) processing was established in the early 1990s as a novel pasteurization technique originally to process fruit based products such as jams and juices (Linton et al., 2000). The number and variety of commercial applications has grown steadily since then, especially for niche products where HP can provide a technological and commercial advantage in relation to fresh taste, nutritional value, microbiological safety and extended shelf-life (Considine et al., 2008; Norton et al., 2008). Most of these applications currently concern high value products with a large profit margin, since high pressure equipment represents a high investment cost and does not allow high volume processing (Patterson et al., 1995; Simpson et al., 1997a; Patterson, 2005). The exploitation of additional applications by the food industry will depend on the development of more cost-efficient HP processing methods. Combination processes of HP treatment and natural antimicrobial compounds (NACs) have been shown to be synergistic with regard to microbial inactivation in some cases, and to overcome intrinsic HP resistance of bacterial strains and baroprotective effects of some food constituents (Gayan et al., 2012). Such combinations therefore provide an attractive approach to make HP processing more effective. The focus of this doctoral work is to investigate the mechanisms underlying the HP-NAC synergism on food related bacteria and the influence of a complex food matrix on the degree of HP-NAC synergism.
