La micronutrition est une discipline récente qui consiste à identifier et satisfaire les besoins nutritionnels de l'individu. Elle permet de calculer les apports nutritionnels optimaux en vue du fonctionnement harmonieux de l'organisme (la santé) et d'une meilleure réponse à l'entraînement (la performance). Les carences en certains nutriments peuvent provoquer des troubles fonctionnels de l'organisme. Plus ces déficits, déséquilibres et intolérances sont importants, plus les répercussions fonctionnelles ou cliniques (tendinites, etc.) seront considérables. La micronutrition, en palliant ces carences, permet d'atteindre un état de fonctionnement optimal de l'organisme. De ce fait, la micronutrition offre d'intéressantes perspectives dans le cadre de l'accompagnement de l'activité sportive. Denis Riché est le spécialiste français de la micronutrition. Dans cet ouvrage, il explique les concepts et les idées qui sous-tendent cette discipline - et le savoir-faire nutritionnel qui en découle - afin de l'appliquer au champ de la performance sportive. La première partie de cet ouvrage évoque les bases théoriques fondamentales sur lesquelles s'appuie la micronutrition : le concept des " maillons faibles " (déséquilibres nutritionnels affectant le bon fonctionnement des tissus), le concept des " poupées russes " (la combinaison des 4 effets des nutriments sur l'organisme). La deuxième partie aborde les aspects pratiques de la micronutrition : les bases de la ration quotidienne, l'accompagnement de l'activité sportive.
